Dwaraka burfi - chickpea flour sweets

Melt the butter in a medium-size bowl. Add chickpea flour and fry, stirring over low heat, making sure it doesn't get burned After 15 minutes, when the flour becomes lightly brown, remove it from the heat.

In another pot boil together milk, water and sugar. Add cashews or walnuts and coconut, and then pour the syrup into the chickpea flour. Cook over low heat stirring constantly, until  the mixture thickens and becomes less sticky.

When the mixture has cooled sufficiently, form rectangular shapes on a platter and when they harden cut them into cubes. Decorate each cube with cashew or nuts or chopped pistachios.

Vegan lemon mousse pie

Preheat the oven to 180° C. Thoroughly press the base mixture into a cake mold (approximately 20 cm long). Bake for 10 minutes at 180° C, remove from the oven and allow it to cool. 

Strain the cashews and place them in a blender. Mix them together with coconut milk until the mixture becomes completely smooth. Depending on the mixer power, this can take up to 5 minutes.

Meanwhile, in a small cooking pan, mix almond milk, agar powder and sugar. Wait until the mixture boils and stir evenly.

When the mixture boils, reduce the heat. Cook for about 5 minutes, then add coconut oil and stir until it is well dissolved in the mixture.
