Muffins have become a part of many anniversaries and celebrations precisely because they have everything you need for an excellent treat – they’re tasty, they have an interesting shape, and they’re bite-sized.
You can make them with any of your favorite spices or ingredients. One of the secrets to a good muffin is to not to over-mix the batter.
It’s enough to mix them so that nothings stick out. Unlike other batters, this one doesn’t need to be smooth.
You can make a gently stirred muffin mixture up to three days in advance, and keep it in the fridge.
Considering the hustle and bustle of the holidays and the fact that many will work until the very last minute, the ability to prepare the batter in advance is without a doubt one of the reasons muffins should find their way to your holiday table.
Ingredients (for 24 muffins):
- 120 ml softened butter
- 20 dkg brown sugar or other natural sweetener of your choice
- 3.5 dcl milk
- 4 cups of eco flower (around 1 kg)
- 2 teaspoons of cinnamon powder
- 200 gr chopped and fried macadamia nuts
- 300 gr of berries of your choice (they can be frozen)
Preparation:
- Preheat the oven to 180°C.
- In a bowl, mix together the butter and sugar (or honey), add milk.
- While gently stirring, add sifted flower and cinnamon powder.
- Mix in the nuts and fruit (which you have previously defrosted, if you do not have fresh fruit)
- Butter the molds and pour the mixture into them.
- Bake the muffins in a pre-heated oven for 20-25 minutes, until they turn slightly brown.
Serve chilled.
