One of the most famous vegetables and a favourite healthy spice constitute a great combination for a holiday soup.
Let this creamy and mildly spiced soup lead you to real holiday enjoyment in gourmet meals.
Ingredients (for 4 persons):
- 2 tablespoons of butter
- 2 teaspoons of minced, fresh ginger
- 700 g cleaned and sliced carrot
- 20 dag potatos, cut in cubes (optional)
- 1 ½ teaspoon of salt
- ½ teaspoons of black pepper
- 1 l water or vegetable stock
- Parsley leaves for decoration
Preparation:
- Melt the butter on a slow fire, in a deep pot. Add the ginger and stir briefly. Then add carrot, potato, salt and pepper. Stew for 10 minutes, stirring occasionally.
- Add the water or the vegetable stock. Let it boil, reduce the fire and leave it for 15 minutes. Let it simmer so that the vegetables soften significantly.
- Remove from fire and pour the liquid and the vegetables into a bowl or a blender. Make a smooth puree with a blender or a stick mixer.
- Rinse the bowl. Return the puree in the bowl and heat the soup on a slow fire. If it is too thick, add more water or stock, to taste.
Decorate with fresh parsley and serve warm.
You need not use the potato cubes, if they do not suit you in this recipe. Their role is to give the soup richer taste and provide thickness.
