
When you are preparing lunch for your family you usually have two goals.
The first goal is that your meal should be delicious and unique and the second goal is that your meal should be healthy and contain useful ingredients.
This recipe fulfils both conditions.
This colorful bowl of young cabbage and pumpkin is considered as “comfort food”.
This means that it makes you feel comfortable while you are eating it and it does not require too much work.
Ingredients that you will use in preparing this meal are a source of proteins, vitamins and other nutrients which one meal should always contain.
Prepare a lunch for your family that will provide them with richness of vitamins.
Ingredients for 4 to 6 persons:
- 1 big onion
- 2 garlic cloves
- Olive oil
- 1 butternut pumpkin
- Rosemary, 2 laurel leaves
- 1 lemon
- ½ of middle sized cabbage
- 200 g of whole grain rice
- 180 g of young beans
- 1 and a half liter of water
- Dried chili pepper
- Salt, pepper
- Fresh parsley
- 1 tablespoon of dried edible bolete mushrooms
Preparation:
Peel and cut onion and garlic. Remove the seeds from chili pepper and cut it into pieces. Prepare pumpkin. Peel it, remove the seeds and cut it into pieces.
Warm olive oil in a big bowl and add chopped onion, pepper and rosemary. Let it fry for a minute or two, mix occasionally. Add pieces of pumpkin, lemon juice and garlic.
Cut the cabbage and add it to other ingredients. Also add rice, water, laurel leaves, salt, pepper and a spoon of dried edible bolete mushrooms, then mix.
Cover the bowl until it boils, lower the heat and cook for 50 to 60 minutes. After 20 to 30 minutes add young beans. Check once in a while if you need to add more water and mix. In the end add a handful of parsley.
Your meal will be ready when rice and beans are cooked. You can be creative while serving and sprinkle the meal with pieces of fresh apple, fresh yogurt or grated parmesan.
