
Warm soups with their enchanting smell that heat you from the inside are an excellent choice during cold weather.
The ingredients they contain are precisely what the body needs during winter.
You can add ravioli to your soup and use the vegetables you prefer. Tortellini can be used instead of ravioli as well.
Prepare this tasty vegetable soup that will bring out a warm smile in cold days.
Ingredients for 4 persons (8 plates):
- 1 tablespoon of extra-virgin olive oil
- 2 cups of bell pepper and onion mix, diced
- 2 garlic cloves, minced
- ¼ teaspoon of milled red paprika (optional)
- 800 g of pelati tomatoes
- 5 dcl of vegetable broth
- 3 dcl of hot water
- 1 teaspoon of dried basil (or marjoram)
- 200 g of ravioli of your choice (best are homemade from whole wheat)
- Freshly ground pepper (optional)
Preparation:
Cooking time is 25 minutes.
Heat the oil in a large saucepan over medium or high heat.
Add pepper-onion mix, garlic and milled red paprika.
Fry the ingredients for one minute.
Add tomatoes, vegetable broth, water and basil or marjoram.
Put it over high heat until it boils.
Add ravioli and cook while mixing for 3 minutes.
Add pumpkin cut into pieces and cook for 3 minutes (until the pumpkin softens).
Add pepper and serve.
Soup can be stored in the fridge for 3 days.
