
Do you like chestnuts, apples, beetroots and sweet potatoes, but you never combined them together?
Then this is a recipe for you.
This is a tasty family meal and a chance for you to try something new.
Ingredients:
- 1 dcl of apple cider vinegar
- 1 dcl of vegetable broth
- 2 tablespoons of butter
- 2 big sweet potatoes
- 2 red onions
- 2 beetroots
- 2 big apples (Granny Smith)
- 20 dag of chestnuts
- ½ dcl of extra-virgin olive oil
- 1 tablespoon of thyme leaves
- Spices per taste – salt and pepper
Preparation:
- Heat the oven to 200°C. Peal beetroots, onions and sweet potatoes and cut them into chunks. Cut the apples into medium slices.
- Into a saucepan add apple cider vinegar, vegetable broth, butter and heat until it boils. Reduce to medium heat and boil for 15 minutes.
- In the meantime put sweet potatoes, onions and chestnuts into a baking pan, add olive oil and thyme leaves, pepper and salt. Mix and then add beetroot.
- Bake in the oven for 20 minutes.
- Mix the vegetables, add apples and bake for another 20 minutes (until the apples and vegetables soften).
- Add sauce and carefully mix. Serve while it is still warm.
