This time we have chosen pumpkin cream soup recipe with curry.
Pumpkin soup can be a perfect dinner.
This meal is estimated for 4 persons, and estimated time of preparation is 25 minutes.
Ingredients:
- 1 small onion, chopped
- 1 teaspoon of olive oil
- 2 cups of vegetable broth
- 1 and ½ cup of fresh, boiled pumpkin
- 1 tablespoon of lemon juice
- 1 teaspoon of curry powder
- 1 teaspoon of brown sugar or agave syrup
- ½ teaspoon of salt (optional)
- A little bit of pepper
- ½ cup of homemade sour cream
- Chopped parsley (optional)
Preparation:
In a saucepan fry chopped onion with olive oil on low heat, until it softens.
Then add vegetable broth, boiled pumpkin, lemon juice, curry powder, brown sugar, salt (optional) and pepper, stir and leave to boil.
Reduce the heat, cover the saucepan and let it simmer for 15 minutes.
Add homemade sour cream and mix. Maintain the warmth during the procedure.
You can decorate it with parsley if you wish.
