Try this new recipe for preparing warm bean salad with aromatic herbs.
This salad can be consumed as a single light meal.

Ingredients:
- 3 cups of cooked and drained white beans (save ⅓ cup of water in which beans were cooked)
Aromatic herbs sauce or dressing:
- 1 tablespoon and 1 teaspoon of extra virgin olive oil
- 2 garlic cloves, chopped
- ½ teaspoon of finely chopped fresh rosemary
- ½ teaspoon of finely chopped fresh thyme
- ⅓ cup of water in which the beans were cooked
- ½ cup of black or green olives (optional), pitted and cut
- 3 tablespoons of chopped fresh parsley
- 4 fresh large basil leaves, finely chopped
- 2 to 3 teaspoons of salt (optional)
- Freshly milled black pepper
Preparation:

Put cooked beans in a non-sticky pan, medium size, and set aside.
- Stir, use low heat, cover and fry until the garlic softens (about 3 minutes).
- Uncover the pan, increase the heat to medium and add rosemary and thyme.
- Fry the herbs until they start sizzling. Be careful that the garlic does not become dark.
- Add water in which the beans were cooked and olives, increase the heat to maximum and cook for 30 seconds.

To prepare the dressing, put garlic and olive oil into a small pan.
- Sprinkle parsley and basil over the beans, pour it with dressing and shake well, for it to stir.
- Put it on heat, shake gently or lift the pan up and down until the beans are warmed and until the dressing is absorbed.
- Remove from the heat and add lemon juice, salt, pepper (per taste).
- Serve warm.
Additional preparation tips:
You can cook the beans the day before, cover and store in the fridge.
It is best to serve the salad while it is warm but it can also be covered and kept in the fridge for 2 days.
