Ingredients:
- 1 cup of cooked chickpeas
- 1 onion, minced
- 2 garlic cloves, minced
- ½ tablespoon of olive oil
- 300 g of chopped tomatoes (or homemade tomato sauce)
- 1 red paprika, minced (optional)
- Pinch of fresh oregano
- 1 dried chili pepper
- ¾ cup of vegetable broth
- Cup of couscous
- Hand full of fresh coriander, minced
- Lemon juice (from one lemon)
- Salt and pepper
Preparation:
Put onion, garlic and paprika on olive oil and fry for a few minutes. When they are soften, add tomatoes, vegetable broth, oregano and chili pepper.
Add chickpeas, salt, pepper and leave it to simmer.
Turn off the heat.
Add couscous (shortly boiled), coriander, lemon juice, salt and pepper.
Mix and leave for 5 minutes.
Decorate with fresh rucola leaves or other favorite aromatic herbs and enjoy your healthy meal.
You can serve this tasty and healthy salad warm or cold, depending on your taste.
