Chickpea Salad with Aromatic Herbs

Chickpea is one of the most favorite vegetarian ingredients that chefs all around the world are including in their menus.

For a good reason.

100 g of cooked chickpeas contain 20 g of proteins and twice more iron and vitamin C then other types of beans.

One chickpeas serving provides the body with important nutritive ingredients especially the ones responsible for muscle growth, which makes it an excellent choice for athletes.

To enjoy a bowl of proteins try this simple salad made from chickpeas and aromatic herbs that you can prepare at any time of the day.


Ingredients:

  • 1 and ½ cups of chickpeas
  • 2 tablespoons of freshly minced basil
  • 2 tablespoons of freshly minced parsley
  • 2 tablespoons of fresh lemon juice
  • 4 teaspoons of olive oil
  • 1 garlic clove, minced
  • Pinch of salt
  • Pinch of freshly milled black pepper
     

Preparation:

  1. Soak chickpeas in water for 8 hours or better leave it soaked over the night. Cook them and strain them.
  2. In a deep bowl mix aromatic herbs, lemon juice, olive oil, garlic and salt. Add chickpeas and mix well.
  3. In the end, add a pinch of pepper.

If you want to prepare this salad with curry, then add curry powder, minced stone leek and carrots cut into pieces.
