Nettle leaves are very tasty and nutritious. Since their taste reminds of spinach they are frequently used as its substitute in the preparation of meals.
They contain large quantities of iron, other important minerals and as many as 20 times more vitamin C than lettuce.
This makes them a great natural remedy for anemia on your plate. They help in body cleansing, alleviate pain, reduce inflammation and stimulate digestion.

Cream nettle soup
Ingredients:
- 20 dg fresh nettle tips
- ½ onion
- 2 garlic cloves
- 1 fresh parsley leaf
- 1 spoon of olive or coconut oil
- 2 dl cooking cream
- water
- salt, pepper
Directions:
Chop the onion and stew it in oil. When the onion turns translucent, add the well-washed nettle leaves and garlic.
When you feel the garlic has released odour, add water and cook for about 10 minutes.
Then stir the soup and put it back on the fire. If the soup is too thick, pour more water. If it's too thin, mix in a spoon of cornflour or psyllium hulls softened in water.
Add salt, pepper, a fresh parsley leaf and cooking cream.
Cook for a couple of minutes more and the soup is ready. Serve while warm.
Nettle risotto with garlic
Ingredients:
- 250 g rice (any variety)
- 4 spoons of olive or coconut oil
- 3 handfuls of nettle tips
- 1 onion
- 1 garlic clove
- salt, pepper
Directions:
Chop the onion and stew it in oil. When the onion turns translucent, add the well-washed nettle leaves, stew briefly and add some warm water.
Add the rice and spices to taste and cook for 15 minutes. Serve while warm.
Crispy nettle and young onion burgers
Ingredients
- 300 g young nettle tips
- 1 potato
- 2 carrots
- 2 young onions
- 2 spoons of oat flakes
- 2 spoons of sour cream
- bread crumbles
- salt, pepper
Directions:
Wash the carrot, potato and nettle leaves, cut them into small pieces and start cooking.
Cook for about 15 minutes, take out of water and strain well.
If you wish, you may chop the cooked carrot, potato and nettle with a stick blender or mash with a fork.
Chop the young onion. Mix in a pot the cooked vegetables, young onion, oat flakes and sour cream, and add the spices.
Make a good mixture, form burgers with the help of bread crumbs and fry them on a medium hot oil until they turn reddish-brown.
Serve the tasty burgers with lettuce or topped with sauce. You have made a great vegetarian dish. Have a good meal!
