Little spicy buns or breads meant to be served at the Christmas table need not be just a hot appetizer.
You may relish eating this bread slowly throughout the meal.
A combination of thyme, oregano and basil guarantees an amazingly tasty delicatesse with a softness and aroma which your guests will find it hard to resist.
Ingredients for 18 breads:
- 1 teaspoon of dry bread
- 3 dcl of hot water
- 1 teaspoon of brown sugar (to taste)
- 700 g of eco flour
- 3 teaspoons of olive oil
- 1 teaspoon of salt
- 1 teaspoon of crushed fresh thyme leaves
- 1 teaspoon of crushed fresh oregano leaves
- 2 teaspoons of minced fresh basil leaves
- poppy and sesame seeds
Preparation:

1. Mix the yeast with several spoons of hot water, add sugar, stir and put it aside for ten minutes. Add salt, oil and spices to the flour and mix together.

Make a hole in the middle of the mixture and add yeast. Pour 3/4 of the hot water and mix. Add the rest of the water to obtain a soft dough which does not stick.

Knead the dough for five to eight minutes and then place it into an oiled bowl. Cover with a cloth or a foil and leave it in a hot place for about an hour or until you notice the quantity of dough has doubled.

Take out the dough and divide it into 18 equal parts. Manually form the breads and place them near one another in a mildly oiled bowl.
Note that the breads will ultimately double in size. The ideal bowl should have a 25 cm diameter, like the one used for pies. A shallower bowl will also do. When you have arranged the breads leave them for another 30 minutes.

Sprinkle them with water and the poppy or sesame seeds.
- Heat the oven to 220 °C and once it is heated bake the breads for 30 to 35 minutes until they turn golden brown.
