Ingredients:
- 1 cup of soy or rice milk (250 ml)
- 1 and a half cup of spelt flour (200 g)
- ½ teaspoon of baking powder
- 2 tablespoons of coconut sugar
- 1 teaspoon of Ceylon cinnamon
- Pinch of salt
- 1 big apple, grated
- 1 teaspoon of coconut oil (for baking)
Preparation:
Mix all the above listed ingredients (except apples) and prepare a smooth dough which doesn’t stick to the bowl.
Then add a grated apple.
Warm a little bit of coconut oil on the pan and put the mixture on the pan, forming a pancake that is 10-12 cm diameter long.
Bake the pancake for 2 minutes on one side and then a minute or two on the other side.
Serve with honey and fruits per taste.
