We are presenting you a recipe for a tasty cake which combines vegetables, nuts and fruits, not requiring baking.
You can try this raw treat whenever you desire new gastronomic delicacies you will enjoy and offer the friends and family a memorable dessert.
Ingredient:
- 7 carrots
- 2 ½ cups Brazil nuts
- ½ cups flax seeds (soaked overnight)
- 1 cup honey
- 1 cup grated dry coconut
- 1 cup raisins
- 1 cup vanilla extract
- 1 teaspoon cinnamon
Topping:
- 1 cup honey
- 1 cup Brazil nuts
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
Preparation:
Grate the carrot. Grind the nuts and flaxseed separately in the blender.
Mix the raisins, vanilla extract, grated coconut, cinnamon and honey in the blender.
Once you have obtained a uniform mix, stir in the ground nuts and the flaxseed and keep on stirring for a while longer.
Place the mix in a cake mold padded with parchment paper, smoothen up and put in the refrigerator for an hour.
Make the topping by putting all the relevant ingredients into the blender and create a creamy homogenous mixture.
Disassemble the cake mold and spread the topping over the biscuit. You may decorate the cake with whole nuts
