This aromatic, nutrient-rich, delicious spinach spread works for any occasion and may be served as a side dish to almost any main course meal.
Apart from enjoying this tasty vegetable spread on whole grain bread, it may also be used to spread and coat pasta or combined with rice and other vegetables.

Ingredients:
- ½ cup green olives, kernel-free
- ½ cup black olives, kernel-free
- 1 cup fresh spinach leaves, chopped
- ½ cup onion, sliced
- 2 garlic cloves
- 1 dcl olive oil
- ½ lemon juice, freshly squeezed
- salt and pepper, to taste
Directions:
Mix all the ingredients together and blend in a blender until the mixture becomes smooth and thick. Optionally season with salt and pepper and sprinkle with a few drops of freshly squeezed lemon juice.
Dressed up with extra greens, this delicious spread makes a delightful vegetarian sandwich, which you may enjoy at work or outdoors, or you may season your picnic food with a delicious spinach dip.
