Broccoli in sesame sauce
Ingredients
- 1 kg of broccoli
- 1/4 cup of soy sauce
- 2 tablespoons of sesame oil
- 1/2 teaspoon of honey
- 2 tablespoons of roasted sesame seeds
Preparation
Cut broccoli into florets and steam for 4-5 minutes until it becomes tender. Cool it.
In a large pot, mix sesame seeds, soy sauce, sesame oil and honey. Add the broccoli and leave the mixture for an hour to marinate. Serve marinated broccoli on leaves of lettuce.

Broccoli pakoras
Ingredients:
- 225 g of chickpea flour
- 2 teaspoons of salt
- ½ teaspoon of baking powder
- 300 ml of cold water
- 700 g of broccoli, cut into flowers
- spices according to taste (asafetida, turmeric, cumin, Roman cumin, coriander, cayenne pepper)
- oil or ghee for frying
Preparation
In a large bowl, mix the flour from chickpeas, spices, salt and baking powder. Slowly add cold water and stir with a whisk until you have smooth dough thick enough to hold onto the vegetables.
Heat the oil.
Place the dough in a few flowers of broccoli and dip them well - so that the dough completely covers each flower.
Each flower remove from the dough separately and quickly put them in the oil. Simultaneously fry a few pakoras until they turn golden-brown and become crispy. Take them out and place them in a strainer to drain.
Serve while still hot with rice and steamed vegetables.

Green smoothie with broccoli
Ingredients
- 1 carrot, cut into chunks
- 4 broccoli flowers
- 2 handfuls of spinach
- 1 apple, cut into chunks
- 2 oranges, peeled and cut into chunks
- 1-2 cups of orange juice
Preparation
Put all ingredients in a blender and grind for 2-3 minutes until the mixture is smooth. Adjust the density of the beverage according to your taste using orange juice.
Stewed spiced vegetables (sabji)
Ingredients
- 1 broccoli cut into flowers
- 1 cauliflower cut into flowers
- 5 carrots cut into thick sticks
- a small quantity of oil
- water
- spices (asafoetida, coriander, garam masala, turmeric)
- 2 teaspoons of salt
Preparation
Heat the oil and briefly fry spices (asafoetida, coriander, garam masala).
Add carrots and cauliflower and stew them, stirring occasionally, over medium heat for 5 minutes.
Add broccoli and half a cup of water, cover the pot and simmer for another 4-5 minutes, stirring occasionally, until vegetables are tender.
Add salt and turmeric and mix well.
You can add a few tablespoons of sour cream or yogurt to vegetables at the end. Serve hot with rice and chapati.

Salad with broccoli and raisins
Dressing
- 1 cup of cashews, soaked overnight
- juice made of 1 lemon
- 2 tablespoons of olive oil
- 1/4 cup of water
- 1 onion
- 1 clove of garlic
- 2 tablespoons of agave syrup (or brown sugar)
- 1/2 tablespoons of mustard powder
- 1 pinch of salt
Put all ingredients in a blender and grind for a few minutes, until the mixture is smooth.

Salad
- 6 cups of chopped broccoli
- 1/2 onion, finely chopped
- 1 cup of raisins
- 1 cup of sunflower seeds
- dressing
Preparation
Mix broccoli, raisins and sunflower seeds. Add dressing and mix well.
