Red currant or redcurrant is a tasty sourish season treat you can prepare in a number of ways.
Apart from enjoying them right away, off the shrub, you can use them to make a fruit salad, add them to healthy fruit and vegetable smoothies or prepare them in various gastronomic variants for a later consumption.
We bring you three recipes which will help you use red currants for a jelly, juice and cocktail.
1. Red currant juice
A refreshing red currant juice is a drink you can enjoy even in the post-season, throughout the year.
It is ideally suited to family gatherings and picnics and it is perfect for children's birthdays because few people can resist its red colour and a great, aromatic taste.
Ingredients:
- 1 kg red currant
- 400 ml water
- 100 ml lemon juice
- 500 g brown sugar
Directions:
Squeeze the juice from the currants, mix it with the remaining ingredients and pour it in bottles.
You can keep the juice in the freezer.
2. Red currant cocktail
Some will make it to embellish their skin, some to improve their digestion, and others because they enjoy the combination of natural ingredients bringing the body refreshment and important nutrients.
Ingredients:
- 3 spoons red currants
- 1 spoon coconut sugar
- 4 dl apple juice.
- 4 ice cubes
Directions:
Mash the red currants and mix it with the other ingredients. Serve cold. Enjoy!
3. Red currant jelly
Ingredients:
- 1 kg red currant
- 700 g brown sugar.
- 2 dl water
Directions:
Mash the red currants, mix it with the water in the bowl and let it boil.
Leave it to cool a bit and then strain.
To the strained mixture add brown sugar and cook on the maximum fire for 30 minutes, stirring frequently.
Pour the mixture into clean sterilized jars. Serve with several red currant berries decorated with peppermint leaves.
