For a pleasant surprise and a protein-rich beverage, convenient both as a drink in its own right or as an addition to a holiday meal, make an orange and almond nectar.
Ingredients (for 4 to 6 persons):
- 250 g whole almonds
- 250 ml ml freshly squeezed orange juice
- 1.25 l water
- Sweetener (brown sugar, stevia or honey)
Preparation:
- Soak the almonds in a closed bowl and let them stay overnight.
- In the morning strain the liquid and pour it over into another bowl.
- Place the almonds with a little strained liquid in a blender or a food processor. Cover and blend for 3 to four minutes, until you obtain a smooth paste.
- You have made almond milk. Strain it by means of a strainer or a cheesecloth. Take every drop and use whatever is left as salad dressing.
- Mix the almond milk with the remaining water in which the almonds soaked overnight.
- Add the orange juice and the natural sweetener of your choice. Mix everything well and store in a refrigerator.
Serve as an iced drink with the main course.
