
Try something new this Christmas – rich vegetarian lasagna!
Soft pasta with layers of delicious béchamel sauce, cheese, spinach and spiced tomato sauce will thrill your family and friends, especially the most demanding ones.
These lasagna are going to excite even the most demanding gourmets and impress friends that you haven’t seen in a long time.
Prepare top gastronomic experience with vegetarian lasagna.
If you want to prepare vegan lasagna you can use cheese substitutes and soya milk.
Ingredients:
- 400 g of pasta for lasagna
- Béchamel sauce
- Tomato sauce
- 500 g of boiled spinach
- Cheese (various types)
1. Tomato sauce
Ingredients:
- 1 dcl of olive oil
- 250 g or 1 cup of freshly milled basil
- 1 teaspoon of dry oregano
- 1 teaspoon of dried rosemary
- 2 laurel leaves
- 3 red paprika, medium size, cut into pieces
- 1,5 liter of pelati (peeled tomatoes)
- ½ cup of black olives, cut into pieces
- 1 teaspoon of salt

1 teaspoon of brown sugar
Preparation:
On medium heat, heat olive oil in large saucepan, add basil, oregano, rosemary, bay leaves and black pepper and fry for few seconds.
Add red paprika, then mix and fry until paprika softens, about 3-4 minutes.
Add peeled tomatoes, olives and mix.
When it boils, reduce the heat and leave the sauce for 10 minutes uncovered, also mix from time to time.
Add other ingredients – salt, sugar, parsley, mix well and remove from the heat.
2. Béchamel sauce
Ingredients:
- 120 g of melted butter
- ¼ teaspoon of nutmeg
- ½ teaspoon of freshly milled black pepper
- ½ cup of eco flour

1 l of warm milk
Preparation:
- Put saucepan on low heat and add melted butter, nutmeg, black pepper and flour. Stir for few minutes until smooth.
- Remove from the heat.
- Gradually pour warm milk, while mixing until smooth.
- Put back on the heat and mix until it boils.

Lover the heat and occasionally stir until the sauce thickens (for about 5 minutes).
3. Cheese
- 300 g of gouda or some other similar cheese
- 250 g of shredded mozzarella
- 20 g of parmesan
1 teaspoon of parmesan for decoration
Preparation of lasagna:
Mix all cheeses in a bowl, except the parmesan for decoration.
Prepare a frying pan for lasagna and put the ingredients in the following order:
- Pour ⅓ of tomato sauce on the bottom of the pan.
- Put ⅕ of pasta over the sauce.
- Then pour ⅓ of béchamel sauce.
- Again put the pasta over the sauce and then add ½ of cheese, ½ of spinach and ⅓ of tomato sauce.
- Add another layer of pasta and ⅓ of béchamel sauce.
- Add another layer of pasta and the remaining cheese, spinach and tomato sauce.
- Cover with a new layer of pasta and pour the remaining béchamel sauce.
Heat the oven to 200 °C. Bake the lasagna for 30-45 minutes until the pasta softens and they become brownish.
It is better to leave lasagna for half an hour before serving, for them to become juicier.
Cut into square pieces and serve warm.
