
Vitamin C is essential for the overall health of the organism.
Among its many valuable properties, it is the strongest antioxidant among vitamins and is extremely important for immunity.
One of its perhaps lesser-known properties is the ability to neutralize the toxicity of nitrate and nitrite, which are added as additives in food.
The chronic lack of vitamin C is a big problem nowadays.
Since humans, unlike most animals, cannot produce vitamin C themselves (because we lacked certain enzymes), it is necessary to ingest it via food or supplements.
However, it is not unimportant from which sources and in which form you take this precious vitamin.
The form of vitamin C is essential
Typically, vitamin C is introduced through food.
Unfortunately, most of us do not have the ability to pick fresh fruits and vegetables in our own garden or orchard.
If we consider that vitamin C is very unstable and is lost if the food is kept in the refrigerators or on shelves and in processes of canning and freezing, the question is how much ultimately we benefit from it.
Further loss of vitamin C also occurs during washing and thermal processing of foods.
When blanching, approximately 25% of vitamin C is lost.
It should be noted that we are talking about the amount of vitamin C which “escaped” into the water during thermal treatment (i.e., it has not disintegrated or disappeared, but has remained in the water).
Vitamin C decomposes only at the temperature of 190 °C, which is impossible to achieve by cooking on the stove.
In other words, if you use the water in which you cooked food for making soup, you will not lose vitamin C.
However, vitamin C reliably very rapidly disintegrates under the influence of light, air, iron and copper, and by cutting and grinding food.
There lies the reason that drinks containing vitamin C should not be stirred with a metal spoon.
Of course, the lack of vitamin C can be compensated by taking supplements.
But if we take it that way, most of the vitamin C will quickly be eliminated from the body, which will limit the benefits.
That is why there are products on the market with the gradual release of vitamin C that can last up to 12 hours.
However, if we want to benefit the most from vitamin C, it is best to take it in the form of sodium ascorbate.
What is sodium ascorbate
Sodium ascorbate is a vitamin C in the form of salts, and the only synthetic form of vitamin C which the body can absorb in a much larger scale.
If we take ordinary vitamin C, we absorb only 16-30 % of it, and in the form of sodium ascorbate we can adsorb as much as 75 %.
Sodium ascorbate is easily prepared from vitamin C (ascorbic acid powder) and baking soda.
Do not use “ordinary” baking soda that is found on store shelves because it contains mostly aluminum.

When preparing sodium ascorbate use a plastic spoon.
You can use distilled or demineralized water, but even ordinary tap water, regardless of the chlorine that is added to drinking water.
In fact, vitamin C is an antioxidant and neutralizes the chlorine vapor.
It is for this reason - to prevent the chlorine from coming in contact with the skin – that it is possible to purchase filtering or shower knobs into which vitamin C tablets can be inserted.
Preparation of sodium ascorbate
Put a teaspoon of ascorbic acid in a glass jar (do not overfill the jar).
Pour a bit of water (2-3 cm).
Add half a teaspoon of baking soda. A violent reaction will occur.
When the liquid stops foaming, stir it with a spoon, wait until the bubbles disappear and then add a little water (2-3 cm).
Drink the mixture. The beverage will have a salty-sour taste (if properly prepared, it will be dominantly salty).
You can use hot water in order to accelerate the reaction.
Drink this beverage between meals.
That way, depending on the size of a teaspoon, you will ingest 2-4 grams of vitamin C with a high level of absorption.
How much vitamin C to intake
Linus Pauling, a double Nobel Prize laureate and renowned advocate of vitamin C, took up to 18 grams of vitamin C in the form of sodium ascorbate every day.
He thought that 5-10 grams of vitamin C per day was sufficient for good health and would prolong our life.
The fact is that the officially recommended doses of vitamin C are too low.
Therefore, they can safely be increased. An excess of vitamin C from the body is completely excreted through the urine.
However, vitamin C in large quantities has a laxative effect. If diarrhea develops, it is a sign that the body is saturated with vitamin C and in this case it is sufficient to reduce the dose.
You can decide for yourself how much vitamin C in the form of sodium ascorbate you will take every day, but whatever the dose you select, keep in mind that it cannot hurt you.
Sodium ascorbate is always prepared in such a way that in one dose you will ingest twice the amount of ascorbic acid than baking soda.
In other words, if you want a lesser quantity than described above, take half a teaspoon of ascorbic acid and a quarter teaspoon of baking soda.
Whatever quantity you use, you should always use 2:1 ratio in favor of ascorbic acid.
